Santa María del Oro

The jewel of the north, Santa Maria del Oro is a small municipality notorious for its lake, which is supposed to be a volcanic crater. A former mining region, the town itself is very nice.

 
 


Surrounded by the mist of ancient tales appears the lake. A vast mass of water, calm and deep; somedays green, others blue, depends on its mineral content. 







El Chicharrón de Pescado

The signature  dish, chicharron de pescado consists of generous and tasty morsels of fish  dipped in a light batter, perfectly deep fried, crispy but never dried. It's served with fresh vegetables, handmade tortillas and spicy salsa. A true delight.
